The cabbage is shredded, salted and layered in the fermenting crock. Now it needs pressure. That releases the juice and keeps everything covered and airtight. This beech wood sauerkraut pounder is made for exactly this job in your crock. With the round head, you press white or red cabbage down layer by layer. Your hands won't get sore from pressing. So your sauerkraut turns out well from the very first batch.

What changes for you

  • You press the cabbage down with ease and draw out the juice. The solid beech head brings the weight and surface area your fist doesn't have.
  • You can work comfortably even in deep fermenting crocks and stoneware crocks. With a length of 60 or 90 cm, you don't have to lean into the crock.
  • You pickle your cabbage with untreated, food-safe beech wood. There's no varnish and no coating.
  • You choose the right size for your crock. The range goes from a handy pounder with a 6 cm head to the large version with a 10.5 cm diameter.

Why this sauerkraut pounder makes a difference

Sauerkraut only works if the cabbage is firmly packed and fully covered by its own juice. With the right tool, this isn't a test of strength. It becomes a calm, almost meditative step: add a layer, salt it, pound it – and watch the juice rise. The smooth beech wood feels warm and gives you a good grip. That's quite different from metal or plastic.

Material & finish

The pounder is made of beech wood. It's untreated and food-safe, so nothing gets into your cabbage that doesn't belong there. Beech is a hard, dense wood. It stands up to vigorous pounding for years. Grain and colour vary from piece to piece. Wood is a natural product, and each one looks a little different. That's not a flaw, it's the nature of wood. The pounder is made in the EU.

How to use the sauerkraut pounder

  • Making sauerkraut: Layer shredded, salted white cabbage in the fermenting crock and press it down. Keep going until the juice stands above the cabbage and fermentation can start safely.
  • For red cabbage and other fermented vegetables: With the same motion, you can also pack red cabbage or pieces of turnip airtight. That way there are no air pockets that could spoil the result.
  • In the farm shop, at the weekly market or in a restaurant kitchen: If you make larger batches, the 90 cm version lets you work quickly, even in tall stoneware crocks. That saves time and is easier on your hands.

Good to know about pounding sauerkraut

Pounding isn't just tradition with sauerkraut. It's the crucial step. The pressure releases the cell juice. The juice covers the cabbage and keeps the air out. Only then can lactic acid bacteria preserve the cabbage. A pounder with a heavy enough head does the work that people often used to do with their bare fists.

Care & durability

Care is simple. After use, just wipe it with a slightly damp cloth and let it air dry. Don't put it in the dishwasher and don't soak it. That way the beech wood keeps its shape and lasts for many pickling seasons.

Frequently asked questions

Is the sauerkraut pounder food-safe? Yes. It's made of untreated, food-safe beech wood with no varnish or coating.

Can the pounder go in the dishwasher? No. Please just wipe it with a slightly damp cloth and don't soak it, so the wood doesn't swell.

Is a cabbage shredder included? No, only the pounder is supplied. Matching wooden cabbage shredders are available separately.

Why does my pounder look different from the photo? Wood is a natural product. Grain and colour vary, so every piece is unique.

The best part isn't the beech pounder itself. It's the moment the juice stands above the cabbage and the lid goes on the crock. You know that in a few weeks your own sauerkraut will be on the table. Just choose the size that fits your crock.
